Celebrating Erich's Birthday + Recipe | Mimi's Lemon Lovely Cake + Cream Cheese Frosting
Erich turned 14 years old this week! He requested Mimi's 'Lemon Lovely' cake and I made it for him with cream cheese buttercream frosting. Erich also requested pulled BBQ chicken sandwiches for dinner and he has also been wanting shrimp. I made Shrimp and Seashell Pasta in Lemon Cream Sauce the next day and he loved it!
1 box lemon Jello pudding
4 eggs
3/4 cup water
1 cup vegetable oil
Prepare cake mix as directed on package with ingredients from above.
Cream Cheese Frosting
1 8 ounce package cream cheese (cold)
1/4 cup butter (room temperature)
1 teaspoon vanilla
4 cups powdered sugar
In a mixer bowl beat together cream cheese, butter and vanilla till light and fluffy. Gradually add powdered sugar, beating till smooth. Spread over cooled cake layers.
*If glaze is desired rather than frosting, prepare glaze while cake is cooling on the rack.
Lemon Glaze
2 cups confectioners sugar
1/2 cup freshly squeezed lemon juice
Beat till smooth.
When cake has cooled down, prick with fork to make holes and spoon glaze over cake. I put the first cake layer on the cake stand and glazed just the top and then put the second layer on top and then glazed the top and sides. Refrigerate until ready to serve.
What's the matter with Monkey? Hmmm, I thought he was a party animal!
