Recipe | Applesauce Spice Cake
Ingredients
2 cups flour
1 cup granulated sugar
1 1/2 cups unsweetened applesauce
1/2 cup butter, room temperature
2 large eggs, room temperature
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1 teaspoon vanilla extract
3/4 cup golden raisins
1/2 cup walnuts or pecans, chopped
Confectioner's sugar for sprinkling on top, after plating, optional.
Method:
Preheat oven to 350*F
Combine all ingredients besides raisins and nuts.
Beat at low speed, scraping bowl often; until ingredients are moistened.
Beat at high speed, scraping bowl often, until smooth.
Stir in raisins and nuts.
Pour into a prepared [greased and floured] pan.
Bake 55-60 minutes or until center is firm to the touch and the edges pull away from the sides of the pan.
Cool cake in pan on a rack for 12 minutes, then invert cake onto wire rack to cool completely---about 2 hours.
Transfer to a serving plate or footed cake plate and sprinkle with Confectioner's sugar using a sifter.
