Birthday Celebration | Recipe | Soft Peanut Butter Cookies
We celebrated the Hubster's birthday last week 'Oktoberfest Style' with bratwurst, spaetzel, roasted carrots and Brussel sprouts. Peanut Butter cookies are his fav treat, so that's what I made in lieu of cake this year. I tried a new recipe this time and it has been approved by the Hubster and he took a bag full to his car club meeting over the weekend and they were a hit! lol
Soft Peanut Butter Cookies
Ingredients:
1 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick of butter
1/2 cup dark brown sugar
1/4 cup granulated sugar
1 large egg
3/4 cup peanut butter (I use Jiff)
1 teaspoon vanilla extract
Method:
Sift together flour, baking soda, salt
In a large mixing bowl of stand mixer, cream together butter and sugars.
Add egg and vanilla. Mix together until incorporated.
Add peanut butter and beat until mixed together.
Add half the flour mixture and lightly beat in. Then add the rest.
Do not over mix.
I refrigerated the dough for a couple of hours. This makes the dough easier to work with and also helps to make the cookies softer.
Preheat oven to 350*F
Using a tablespoon, scoop enough dough to form a 1 1/2 inch ball, by rolling in the palms of you hands.
Roll the balls in granulated sugar and place on a parchment lined cookie sheet 2 inches apart.
Press tines of fork on top of ball to make a criss-cross pattern on top.
Bake 12-15 minutes, or until the edges of cookies turn golden.
Cool on cookie sheet and transfer to plate when cooled.
Store in air tight container or storage bag.
Yields 2-3 dozen cookies, depending on the size of the dough balls.
