Ham & Leek Quiche
Preheat oven: 400*F
1 Pie Crust ( single)
Ingredients
1 Tablespoon butter
3 cups thinly sliced leeks, rinsed/drained well
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground pepper
1 cup diced smoked ham
3 large eggs
1-1/2 cups heavy cream
1 pinch freshly grated nutmeg
1/4 cup finely grated Gruyere cheese
Method
Butter and lightly flour bottom of 9" pie plate or removeable tart pan
Place pie dough in pan and form crust on edge.
Line crust with a piece of foil and fill with dried beans.
Bake 15 minutes at 400*F
Remove foil and weights and bake 3-5 minutes, until very light golden.
Reduce oven temperature to 350*F
Melt butter in a saute pan, add leeks.
Cook 5 minutes, season with S&P.
Let cool.
Add diced ham.
Wisk eggs and cream together.
add 1/2 teaspoon pepper and pinch of nutmeg.
Cover pie crust with leek mixture over top of crust,
Pour egg mixture over top, sprinkle with Gruyere cheese.
Bake 40-45 minutes.
