Recipe | Zucchini, Lemon & Feta Salad
Need a fresh, quick and easy side dish? Yesterday I prepared a fresh zucchini, lemon, dill and feta salad. We love this salad! The zuchinni combined with the feta, lemon and dill is so tangy, bright and flavorful! Yesterday evening we had BBQ chicken legs for dinner. Keith is the Grill Meister of our household and Erich loves BBQ chicken. He even thanked me in advance when he saw me preparing the chicken for Keith to grill. If there are any leftovers, I shred the chicken and simmer it in a pan with additional BBQ sauce and then serve it on a hamburger bun for Erich's after school snack.
Martha Stewart's Zucchini Salad
Adapted from Martha Stewart Living
2 medium size zucchini
1/2 cup feta cheese cubed
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest (optional)
3 tablespoons extra virgin olive oil
1 tablespoon finely chopped dill and 2 sprigs to garnish
salt and freshly ground pepper
With a citrus zester-- zest the lemon, set aside. Cut lemon in half and squeeze juice into a strainer over a small bowl.
Cut zucchini in half lengthwise, then cut each half into three strips lengthwise and then cut crosswise into cubes.
Cut feta cheese into cubes the same size as the zucchini.
Finely chop dill.
Wisk together olive oil, lemon juice, in a large bowl. Add the zucchini, feta and dill and combine until the zucchini and feta is covered in the dressing. Season with lemon zest, salt and freshly ground pepper---toss again and the refrigerate. This can be served immediately. I like to let it marinate in the refrigerator for at least an half and hour before serving, the feta mingles into the dressing and makes it creamy. Toss salad and garnish with dill sprigs before serving.
I sliced fresh tomatoes and baked some Rhodes Buttery Dinner Rolls.
