Chicken with Balsamic-Fig Sauce
Ingredients
4-6 Bone-in chicken thighs
1 1/2 teaspoons fresh thyme
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground pepper, divided
1-2 Tablespoons extra virgin olive oil
1-2 Tablespoons butter
1 medium onion, finely diced
1/2 cup low sodium chicken broth
1/4 cup balsamic vinegar
2 teaspoons low-sodium soy sauce
1/2 cup fig preserves
Method:
Sprinkle all sides of chicken thighs with salt, pepper and 1/2 teaspoon thyme leaves.
Heat oil in large skillet over medium heat.
Add chicken, skin side down. Cook till golden brown, 6 minutes, and turn. Continue to cook 6 minutes, until golden brown and juices run clear.
Remove chicken from pan.
Add butter to skillet. Add onions and saute until translucent.
Add broth, vinegar, soy sauce, 1 teaspoon thyme leaves, 1/4 teaspoon salt, 1/4 teaspoon pepper and fig preserves.
Stir together, simmering until sauce thickens, 5-10 minutes.
Plate chicken thighs, cover with fig sauce.
Serve with vegetable and rice.
