Chicken with Peach Preserves
For the sauce:
3-4 Tablespoons Bonne Maman Peach Preserves
1 lemon, juiced
2 Tablespoons soy sauce
1 teaspoon ginger
For the chicken:
4-5 bone-in chicken thighs with skin
1 cup all-purpose flour
salt & pepper
2 Tablespoons butter
4 Tablespoons avocado oil
For the garnish:
1/3 cup slivered almonds, toasted
1/4 cup green onions, sliced on an angle
Method: Preheat oven 375* F
Dry chicken thighs with paper towel and sprinkle with salt and pepper on both sides.
Dredge thighs in flour.
Fry chicken in skillet on both sides until golden brown.
Place thighs on parchment lined baking sheet and bake for 15 minutes or until the juices run clear.
Meanwhile, mix preserves, lemon juice, ground ginger, and soy sauce in skillet and simmer over low heat, stirring occasionally.
Return chicken to skillet and simmer a few minutes, basting chicken with sauce.
Place chicken on plate and garnish with toasted sliced almonds and sliced green onions.
